There are two types of shiso sold in Japan: green and red.
Green shiso is very refreshing when eaten with sushi or noodles.
Most of my cooked red shiso is cooked and eaten.
The amount of sugar and vinegar you put in when making juice can be as much or as little as you like.
However, if you do not add sugar, the juice concentrate will not keep for long in the refrigerator.
