I'm making my guanciale pasta tonight for the kids.
It's pretty simple, just takes some time. Essentially guanciale with kalamata olives and mushrooms, in a red sauce.
I do it either of two ways. Hold back the pre-fried/rendered guanciale until the end, using just the fat to flavour the dish, but giving crunchy, fatty, cubes of awesomeness; or I return it early, allowing them to completely dissolve into the sauce.
Either way is awesome, I'm doing the latter today
