Here's how I made mine in an Instant Pot:
Ingredients
1 Tbsp Extra Virgin Olive Oil
1.5c Basmati rice
.5c Rainbow quinoa
20oz Bone broth (I used chicken, but you can use any)
Pinch of Himalayan or Real salt
1. Turn the Instant Pot to Saute (medium heat) and add olive oil
2. In a mesh strainer, rinse rice & quinoa under running water. Drain as well as possible, then add to Instant Pot
3. Saute for a couple of minutes, until lightly toasted. Stir frequently, to avoid anything sticking to the bottom.
4. Pour in bone broth and scrape sides. Make sure everything is submerged in the broth, and the rice+quinoa is relatively level.
5. Seal the lid (make sure the steam valve is closed), then turn on Pressure Cook (high heat), with the timer set for 2 minutes.
6. Allow the pressure to release naturally for 10 minutes, then open the valve to release any remaining steam.
7. Sprinkle the salt over the rice+quinoa and fluff with a fork. Serve or store for later.
