A bit of cooking philosophy:
To me, being able to cook well isn't being able to make complex dishes, or having the best/most expensive ingredients.
To me, being able to cook is having repeated techniques often enough that they're second nature, and knowing how to make a simple meal special.
Sure, there's more to it, but focusing on complexity, rarity, etc, is to miss the point of making food for people you love.
Make it often, make it with love
