It's weird how bao (open-faced Taiwanese-style ones) are all of a sudden everywhere here in Poland, when most of those you get at least in my area taste kind of stale.
At least from what I know they are supposed to be made fresh and eaten directly after filling them. Instead people use them as buffet food, leaving them ample time to dry out and become the culinary equivalent of cardboard. Why not just use traditional rolls then?
