What we are taught sometimes gives us a framework in which to discuss our individual experiences, to be sure. Would we have non-rational interpretations of how we experience reality without being taught religion? An open question - I think some individuals would certainly do so - the human mind seeks to "fill in the blanks", so to speak - and they would do so in a myriad of ways.
The symbolism in many practices are like a language for our psyches, which best relate to personal experiences & observations. They are not linear, not empirical lines of thought - which does not make them inferior, just not "rational".
