I feel like the main realization that helped me personally go vegetarian is that I *don't* actually need 1:1 replacements of meat and other animal products. Like sure it's nice that we now have vegan "meat" and other such products that really replicate the real thing quite well but also you can totally just go without that. Plant-based food is different but it is also really hecking delicious once you know what you're doing. You won't get the exact same textures and flavors but you really don't need to. It's upsetting that society convinced us that meat is an absolutely essential part of cooking and you NEED it or at least products that look, feel and taste completely the same.
