Ecash can achieve a very similar level of privacy as physical cash.
If physical was invented today, it would probably be illegale (saying).
As free people of democratic nations who support freedom, we should also support privacy because, without privacy, we will not be able to exercise any of our rights in the future.
The discussion should go in a direction where we normalize privacy and enable it for everyone.
Although I would love to see Ecash perfectly private for everyone and every amount, I am not sure if this can be achieved in the short term in a hostile environment. Would it be possible to create mints, which are limited to a certain amount - say 500 $? That way, there would be much less attack surface, and the tools and mints could be built the right way. From there, the sky is the limit.
