Oh and I'll change the yeast. I wasn't happy with SafAle's business decisions last year so I am switching to Lallemand Abbayé. It should lead to a very similar result. Plus I love Abbayé. If I had to brew with one yeast for the rest of my life, this would probably be it. 😍
