Spanish Chicken Croquettes Recipe
Ingredients:
• Approximately 2 1/2 cups of shredded rotisserie chicken
• 1/2 medium onion, finely diced
• 2 tablespoons of olive oil
• 1 1/2 cups of milk
• 7 tablespoons of flour
• 3 tablespoons of butter
• Salt to taste
• Black pepper
• 2 eggs
• Breadcrumbs
Preparation:
1. In a deep frying pan, heat the olive oil and add the finely diced onion. Sauté the onion until it is well softened.
2. Add the butter and flour, cooking for a few minutes. Gradually add the milk while stirring well with the flour to avoid lumps.
3. Add salt and black pepper to taste. Once the flour mixture has a smooth and still liquid texture, add the finely shredded chicken and continue stirring until you get a uniform mixture that easily separates from the pan.
4. Let the mixture cool completely.
5. Using an ice cream scoop, form the croquettes so that they are all the same size and shape them into ovals.
6. In a separate bowl, beat an egg, and in another, place the breadcrumbs. Dip each croquette first in the egg and then in the breadcrumbs.
7. Heat olive oil in a deep pan and fry the croquettes, fully submerged in hot oil for a couple of minutes until golden.
