From my experience it's about the variety and mostly the humidity. Currently I have Husky at the house (looks already terrible, though marketed as a winter variety). At the market garden it's Avano, which looks fine. A good winter variety can take -10°C for a few days + snow around here and can be harvested through frost-free periods all winter long. Blaugrüner Winter was quite reliable in the past (no great taste though).
