If you are in a mint of 10,000 people and you make an internal payment all that can be seen (even by mint operator) is that one of 10,000 has made a payment to one other. Or perhaps they just swapped some notes!
This can be degraded based on networking considerations or if particular scripts are used that might leak other info.
In terms of lightning the privacy you would see something similar. I.e one of 10,000 people has paid a lightning invoice but you wouldn’t know who.
