They don't til they do lol. I had a huge nest in my shop for like 3 years was all hippy like live and let live. One day for no reason whatsoever 6 or 8 I lost count swooped down and nailed my neck back and scalp. I bought spray the next day and shop became a no wasp zone.
Other notable experiences include opening hood on farm truck parked for like a year and sticking my fingers into a wasp nest built around the hood latch.
Also in a box of grease cartridges another fun 5 finger sting moment.
I have lost tolerance for them but yes compared to ground hornets they are diplomats
