On one of my first visits to South India, one of the hotels served a simple dish of sliced banana, pomegranate kernels and fresh shredded coconut. Such a beautiful dish despite its simplicity.
Way back then I wanted to make it at home. I hunted down a pomegranate, they were rare then, but it turned out to be one of the most sour things I've eaten, and the kernels were as hard as diamonds.
Fast forward over 5-10 years, and pomegranates are more available. And edible. Every now and again, in Summer, I make this lovely, simple dish. Serve with cream or icecream if you want something with it.
You can use frozen grated coconut, or just go with dried grated or flakes.
