Mining gold produces more above-ground gold. Mining bitcoin does not produce more bitcoin, it just changes the distribution of coins that will be issued anyway.
The amount of bitcoin is predetermined and fixed in time. As long as anyone is mining, even if it was only Satoshi's CPU, 21 million BTC will be issued until the year 2140.
