IIRC from another poast? or maybe reddit or some other community, the issue with modern bread is that the flour (and other ingredients¿) aren't what was used to be, IIRC the gist was that they are super refined and don't resemble the "source". Don't remember reading anything about the soil or crossing/mixing with other crops.
