On the menu tonight - Crock Pot Brunswick Stew!
This is the easiest meal I've made. Put everything in the Crock pot, set it on low for 4 hrs - that's it.
The only real prep was dicing the onion. Everything else was already prepared. I used pulled pork, smoked chicken, and smoked sausage from one of my favorite BBQ joints. The other veggies were canned, so all I had to do was open the can and put it in the Crock Pot.
For the protein, there are a ton of ways you can go. Some of the older recipes I have read called for squirrel and opossum. MMMM, maybe not this time. While I've had versions that had squirrel, and it was delicious, I used pulled pork, smoked sausage and smoked chicken.
The result was FANTASTIC! I hope you'll try my version of Brunswick Stew!
