Got a whole bunch of top sirloin cap
And cut it up, vacuum sealed, and into the freezer
I tried a reverse sear method, cast iron pan in the oven, than searing the heck out of it on the stove top
Recipe called out 35 minutes in the oven at 250degrees , internal temp up to 105
Well I put it in for 30 minutes thinking I’d check it a couple of times
First time I check at 30 minutes
The meat is all ready at 145
Arrrgh!
Thought I ruined it
Let it sit about 15 minutes ( tented)
And it is delicious
Yay

So the teachable moment is
Don’t cut up top sirloin cap into steaks when trying this recipe
Again I lucked out on this one
