Today’s huevos rancheros has a fresh batch of salsa.

The ingredient that took my salsa from mild to “my eyes are watering a few minutes later” type hot is the brine from my pickled Thai bird’s eye chilis.

It’s sweet, hot, and vinegary so just pouring some in at the end is the perfect way to finish the salsa. I have a big batch now.

Your pickle brines are bonus flavours — especially pickled hot peppers. Make quick pickles and use the brines in marinades and sauces.
