I have been using Debian, off an on for a decade, but it wasn't until recently that I started using it as my production server distribution.
Ubuntu is taking too many liberties and changing too many fundamentals between releases.
RedHat / CentOS / Oracle / Amazon seems to be suffering from some form of schizophrenia and doesn't appear to know which .
SUSE still appears to be a valid server choice, but I know of very few admins/engineers who use it.
