I just did this on a Mac Mini. Ubuntu is a good option but Debian is less bloated and thus more secure. I wiped MacOS, installed Debian 11, ran a one line script to download and install Umbrel. Pretty easy. If you’re not a Linux person, it’s still doable because you’ll just use a GNOME or other GUI.
