so as you are way better with Linux than i am:
I used simple Scan in the first place which worked okayish and then tried gscan2pdf which from overall what it had to offer was more of what i was looking for. Sadly as said i borked it somehow and.... things went downhil from there.

I would look into gscan2pdf but if it only should scan and give you the output use simplescan :)
