It was still a touch try though. Next time I will try a wet brine before the sous vide cook and probably smoke at a lower temp as it dumped a lot of liquid during the smoke.

Seasoned it up and right now it’s #SousVide cooking for 24 hours and will do a hot and fast rip on the #Smoker to finish it. Hope it turns out well!
