I hate stainless steel kitchen knives. You sharpen and sharpen and sharpen with the whetstone and it makes bugger all difference. I wish there were still GRT people coming round to do knife-sharpening but there isn't. I will have to ask someone with an angle-grinder. My untempered steel knives are a joy and so easy to sharpen, but I only have 3, two small and one quite large.
