Normally, if I skip anything it would be paragraphs or scenes that bothered me for some reason. However, now that I'm thinking about it, there have been non-fiction books where a chapter covered something I'd no interest in, and I did skip it.
I don't see anything wrong with skipping a chapter for the reason you've given. There seem to be a lot of unwritten "reading laws" we internalize. But, if you buy a book, the book is yours to read how you want.
