For short missions in space, astronauts can just eat pre-packaged food from Earth. But when missions stretch to years, astronauts will be craving fresh food. Researchers have developed a healthy "space salad" made from sustainable ingredients that could be grown in space (or on Mars). The mixture of fresh ingredients is designed to provide the best balance of nutrients using plants that require the least fertilizer to grow: soybeans, poppy seeds, barley, kale, etc.
