I found their buds more bitter & their tubers less sweet than orange & yellow ones. We use their flower petals in some soups, to thicken & occasionally add petals to salads(not much distinct flavour in petals). Buds, when fried, taste like a mix of radish/green beans. Stalks have a light onion taste - really tough texture though & I'd only use to infuse/flavour stews/soups stock. The tubers taste like sweet potatos.
