Easy ginger beer recipe:
Fill a large pot with 4 cups of water, 1/4 cup of grated ginger, 1/2 teaspoon cream of tartar, and juice of one small lime. Bring to a rolling boil. Add 1 cup of sugar, 5 cups of water, mix until dissolved. Turn heat off and allow to cool to room temp. Once cool, strain out solids. Add 1 teaspoon of active (bread) yeast to liquid and mix. Pour into gasketed bottles (as pictured in the OP).
Makes ~2 liters.
Burp bottles every 6-12 hours for 2-3 days.
