This is one time where user frustration isn't the point. The point is touchscreens are less safe than physical buttons in cars, because touchscreens need to be looked at.
I'm glad you got the defogger to work via voice, but it's not really better, simply because voice just doesn't work that well, especially if there are other passengers in the car.
