Wow, because of avian influenza (H5N1) I haven't been able to buy eggs for two weeks now. I got hungry for something that required breading and frying so I looked up egg wash alternatives. Bingo, mayonnaise! I'd say mayonnaise worked better than a regular egg wash. This chicken parmesan I made is outstanding!
