It was a lot of work (but then again most great dishes are...) but I'm on this kick that vegan isn't just soups and salads.... you know? I mean I want actual dishes that everyone -vegan or not - will enjoy. Like my eggplant caviar roasted tomato pie with a sweet potato dough... lot of work but worth it. Throw in a salad and you have a meal!
