We face similar but much smaller challenges with convincing people to change in other things, too. One method I'm learning about at work is the ADKAR (TM) method. the key pieces are making people Aware of the need for change, and fostering in them a Desire to change. As with most sales and marketing, you've got to spend a lot of time describing the problem, the risks of not changing, and what's in it for them.
