Homemade chicken pot pie using biscuits on top
2 cups cooked chicken, diced or shredded
1 cup frozen mixed vegetables (carrots, peas, corn)
1/2 cup diced onion
1/4 cup diced celery
1/4 cup butter
1/3 cup all-purpose flour
1- 3/4 cups chicken broth
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 can (8 biscuits) refrigerated biscuit dough or homemade biscuit dough
Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and cook until softened, about 5 minutes.
Stir in the flour and cook for 1-2 minutes, until lightly golden brown.
Gradually whisk in the chicken broth and milk until smooth. Cook and stir until the mixture thickens, about 5 minutes.
Add the cooked chicken, frozen vegetables, salt, pepper, thyme, garlic powder, and onion powder. Stir until well combined and heated through. Remove from heat.
Transfer the chicken mixture to a 9x13-inch baking dish.
Arrange the biscuits on top of the chicken mixture, evenly spaced apart.
Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and cooked through.
Remove from the oven and let it cool for a few minutes before serving.
