Yeah, even in the jars the ink can look different compared to how it'll look when it's spread on paper. I attended a workshop with a painter who talked a lot about the properties of paint/mixed colours/glazes and dang if I don't want to see it applied to other mediums now too, haha. His whole lecture was about light refraction. Just stuff I'd never thought about before.
