When you buy from a KYC exchange they have your receiving address/UTXO and your identity so Chainanalysis can track all transactions forever since it’s an open ledger.
If you buy p2p the back doesn’t know you bought bitcoin or the receiving address/UTXO of that bitcoin so they can’t track it in relation to you as an individual.
