Your a jerk! I listen to TSP rewind 269 last week. I remembered i had a deer leg in the freezer, so I took it out and put in a brine for the night once it thawed. I then smoked it at 250-300 until internal temperature hit 145, then wrapped in foil and continued until it hit 200. The placed in a cooler wrapped in a towel for another hour. Let me tell you this was the most tender fall off the bone venison from one of the worst cuts you would have ever thought!
