When it comes to oven-roasted chicken, it honestly couldn’t be easier!
This is my version of chicken & rice because in a past life, I was probably a fried chicken restaurant owner lol. But, chicken in this house is ONLY fried or baked in beef tallow or pork fat 🐷🐮.
Instructions:
🐓 Marinate the chicken the night before with every herb you’ve got—seriously, the more, the better. And please don’t even think about removing the skin! That’s where the nutrients and all the flavor magic happen.
🐓In the meantime start cooking the Persian basmati rice in bone broth on low heat, add extra virgin olive oil, turmeric and Zafron.
🐓Before baking, rub a generous amount of beef tallow on each thigh. This step makes the chicken super juicy and gives it a boost of healthy fats.
🐓Bake at 180°C (350°F) for about 40 minutes, then crank up the heat or use the grill for the last 10–15 minutes to get that skin crispy perfection.
🐓 Add the rice with some cranberry and place the Chicken on top so the rice absorbs all the chicken fat too.
