Single-product restaurants, like Cinnaholic, seem to be getting more popular. I think someone should start a mussel bar. Mussels are the optimal seafood: healthy, inexpensive, and so sustainable farming them actually improves the environment. Offer paella, adobo, and marinated or fried mussels in dozens of dishes.
Give it a pun name. Perhaps "Mussel Car" - be like a sushi conveyor belt restaurant, but with little electric cars driving plates to tables.
