I think there's a chance it has to do with the way Western Europe assimilated Christianity without a single coherent empire.
In the East, Christendom was just Byzantium. Church and Imperial Law were a single thing, and when Byzantium went away, so did most of Eastern Christianity.
In the West it was different. You had localized nations and empires with little ethnic relation, but religiously, they were synthesized under the Pope and subject to that foreign influence.
Even when the medieval Papacy went away, the adaptations Western Europeans made during that time persisted. I really don't think the jews as an ethnicity are responsible for changing the attitude of Whites because they tried to do the same thing in the Muslim world under similar circumstances, and failed miserably.
