Hopping through browsers is often eeasier and faster that switching profiles in a browser. Plus if you install PWAs as a specific profile, whenever you open the browser directly after opening said PWA it goes straight to that profile.
I don't know if these are his reasons, but these are definetly why I do the same. + If your developing then Firefox-based browsers and Safari are kinda the IE of modern internet, they always lag behind in one feature or another.
