there is one particular avatar in vrchat that is supposed to replicate blindness in a pretty interesting way. Basically when you use the avatar everything goes black except for things in a certain radius from your hands and its blurry until your hand is on top of it practically. Its also grayscale.
But yeah there definitely is a way to use VR to deliver a standalone experience using screenspace shaders. It would be pretty simple for someone to simulate various colorblindness for example.
