it is likely that they follow someone who boosted some of your posts and depending on how closely they are paying attention to their feed (and which app or interface they are using) they might not realize they aren’t already following you if they keep seeing your posts in their feeds.
(I’m a fairly power user of social media and this has happened to me a few times - finally checked if I was following someone and realized nope, I just had seen them boosted so often it felt like I was)
