Summer coolers today - there are 3 of them, spoiled for choice.
๐ Iced lemon verbena tea
๐ Coconut water with lime juice, soda water, a pinch salt and sweetner if you need it.
๐Tamarind cooler - make a sweet syrup (you need 250ml per glass), let it cool, add lime juice and tamarind (add small amounts of tamarind until it tastes perfectly sweet-sour balanced). Pour and top with lemonade, tonic water, soda water or mineral water. OPTIONS: Add some mint leaves. Or garnish with slices of lemon. Grated ginger or minced crystallised ginger can be added to the sugar syrup - allow to cool and then strain before using. I love to soak dried barberries or cranberries in the sugar syrup โ add as it comes off the heat โ and spoon some into each glass.
