Maybe your IPv6 changes because you have privacy extensions enabled, what does "sysctl net.ipv6.conf.eth0.use_tempaddr" say? Or whatever is your primary network interface instead of eth0.
If it's 1 or 2 then it sets a random suffix every few hours, but it's for privacy only, it should have a permanent address in addition to that.
