I think we should be clear about what each app can do for you. And Signal is hiding it's flaws as well as holding back sources, that breeds distrust.
Secondly, we are all just one step away of being criminals. I will never forget that visiting my parents was a crime in 2020/21 or that heat seeking drones where used to find Belgians who locked down in their summer homes instead of primary residence. So their government should be in everyone's threat list, on the top and I don't trust Signal against that.
