Salmon spinach roll snack with parsnip puree
Spinach crepe
- 100gr spinach
- 120 gr flour
- 250ml milk
- 2 eggs
- pinch of salt
-Add everything to a food processor blend until now more green specks.
-In a hot pan on medium high heat with a touch of olive oil
Add a thin layer of the batter and bake for 1.5 min then flip
Parsnip puree
- 2 large parsnip
- splash of milk
- 75gr butter
Peel and chop up the parsnip boil for 20 min.
Drain and with a hand blender puree add the milk and butter till smooth consistentsy
Take a crepe smear one side in with Boursin or a home made herb Cheese
On the bottom third add two slices of smoked salmon and roll up.
Slice into bite sized bites serve on top of puree and sprinkle with chives
*Finding a way to add horseradish may improve the dish
