#Experimentalbaking with #sourdough. 4 different lengths of second prove (in the baking tins) from L to R: 1.5, 2, 3, 4hr. Surprisingly little diff (Left tin narrower). Think 2hr is most even crumb. Less oven spring with longer 2nd prove.
