We had this conversation years ago in Seattle before a significant rise in the minimum wage. Restaurant owners in particular said they would never open another location in this town, etc. All of those who said they wouldn’t have since opened more locations. Employment has almost never been stronger. Most places have to pay above minimum wage even to get entry-level workers.
