They are direct p2p through whatever server or network they use and have some groupchat implementation. But it's one server or one particular network.
So you need an invite to chat with a counterparty or get into the group.
With matrix or xmpp, anyone can spin up a server and many servers are connected. you can start a groupchat or room, list it and someone on a different server somewhere can connect.
Simplex tries to solve this by having a centralized directory service you can be listed on, maybe Session has one too?

there are like a million different chat apps these days and they all have their tradeoffs vis a vis usability, discoverability and scalability...
