But is isn't true that Egyptians knew Pythagoras' theorem "thousands of years" before Pythagoras wrote it down.

They used a 3/4/5 triangle to make right angles. Pythagoras' theorem is far more general. And it isn't even clear that they had proven that the one triangle they knew about was in fact a perfect right angle.
